NICPOŃ Gdańsk: Good Coffee, Bad Behaviour, Zero Snobbery

He barely drank coffee. Now he’s running NICPOŃ in Gdańsk’s Letnica, breaking coffee rules and proving that a little trouble can taste pretty damn good.

    Before NICPOŃ, who was Maciej?

I started in hospitality in 2017. A friend persuaded me to try specialty coffee. Ironically, I barely drank coffee and couldn’t distinguish a cappuccino from a flat white! A year later, I was head barista.

What pushed you to open your own place?

My girlfriend encouraged me enormously. She still helps with paperwork and the café. The reality check? Great coffee doesn’t automatically pay the bills!

    Why choose Letnica?

I wanted specialty coffee outside Gdańsk’s obvious hotspots. Somewhere neighbours could enjoy great coffee without travelling downtown.

NICPOŃ means troublemaker. Are you one?

A little! I like doing things differently. We wanted a playful name that makes people smile.

What annoys you about coffee culture?

Snobbery! Drink whatever makes you happy. Espresso, sweet latte, caramel syrup. There’s no correct way to enjoy coffee.

    Your autumn menu favourite?

Banana Bread Latte! I created it because I love warm banana bread. Our Maple Orange Latte combines maple syrup, orange, cardamom and smoked salt.

A beginner, flat-white addict and coffee geek walk in. What are you serving?

A pour-over for the beginner, a flat white for the addict, and experimental Vietnamese coffee macerated with lavender for the geek.

    Strangest coffee you’ve tasted?

That Vietnamese coffee! Blueberries, cinnamon bun and lavender. Incredible. Specialty instant coffee, though? Maybe we’ve taken convenience too far.

What’s the reality behind running NICPOŃ?

Invoices, repairs, endless responsibilities and very few days off. It’s mentally exhausting. But regulars remembering me, smiling and sharing my latte art make everything worthwhile.

What’s the most outrageous thing you’ve ever done?

As a child, I wandered off in Toruń and disappeared! Police got involved. Teenagers eventually helped reunite me with my family. My crying grandmother rewarded them with ice-cream money. She still reminds me about it!

Maciej takes his coffee seriously, but thankfully not himself. At NICPOŃ, there’s room for coffee geeks, caramel syrup lovers and everyone in between. He’s building something personal in Letnica, one cup and one familiar face at a time. And considering he once had the police searching for him as a runaway kid in Toruń, perhaps the name was always meant to be. Once a little troublemaker, always a Nicpoń. At least now everyone knows where to find him.

  • Marta Takes the Helm: Shaking Up Gdańsk’s Cultural Scene at NCK

Marta Takes the Helm: Shaking Up Gdańsk’s Cultural Scene at NCK

Marta has swapped the music world and boardrooms for the business of shaking up Gdańsk’s cultural scene. Now running the Nadbałtyckie Centrum Kultury, she’s questioning festival fever, challenging the cultural establishment and dreaming of taking Polish art out to sea. We caught up with a woman who respects tradition but isn’t afraid to rock the boat.

You’ve worked in PR, music and business. Was there ever a career plan?

Not exactly a map, more a compass. I’ve always been curious about people and willing to take risks. Every experience gave me something I could use elsewhere. The common thread has always been connecting people and ideas.

You inherited NCK after Lawrence Ugwu’s 20-year leadership. Preserve or reinvent?

Both. Lawrence left an important legacy, but respecting history doesn’t mean repeating it. Culture must respond to a changing world. I’m interested in meaningful development, not change for its own sake.

Can publicly funded culture ever be politically independent?

Public accountability is essential, but political interference in artistic programming is another matter. Independence means protecting creative freedom and remaining faithful to our mission, even when that’s uncomfortable.

You’ve criticised the obsession with festivals and events. Why?

We sometimes confuse activity with cultural significance. Counting concerts and visitors is easy. Measuring whether culture changes someone’s thinking or creates lasting relationships is much harder. We don’t always need more events. We need more meaning.

Has the cultural world become an exclusive club?

That’s a real danger. Culture develops its own language and hierarchies. Accessibility isn’t just about ticket prices. It’s about making people feel welcome, even without specialist knowledge.

What should newcomers to Gdańsk experience at NCK?

Start with a concert at St John’s Centre, then discover the Old Town Hall. You don’t need fluent Polish to connect with culture. Sometimes belonging begins with a shared experience.

Unlimited budget. Complete artistic freedom. What’s your wildest idea?

A sailing ship carrying Pomeranian artists around the Baltic, stopping at ecological marinas, connecting creators, scientists and communities. A cultural expedition asking one question: What does it mean to be Baltic? We know the Mediterranean’s story. It’s time to tell ours.

Marta isn’t interested in filling calendars just to keep everyone happy. She wants culture that challenges, connects and actually means something. And if her dream of taking Pomeranian artists around the Baltic on a sailing ship ever becomes reality, we’ll be watching. Because Marta didn’t take the helm to play it safe. She came to make waves.

  • CHIX Gdańsk: From Michelin Kitchens to Korean Fried Chicken

CHIX Gdańsk: From Michelin Kitchens to Korean Fried Chicken

FROM MICHELIN KITCHENS TO SERVING CRISPY KOREAN CHICKEN IN GDAŃSK. OLAF DITCHED THE FANCY PLATES BUT KEPT THE OBSESSION. NO WHITE TABLECLOTHS, NO BULLSHIT. JUST SERIOUSLY GOOD CHICKEN.

FROM FINE DINING TO FRIED CHICKEN. WHY?

After years in fine dining, I wanted to serve affordable soul food with Michelin-level attention to detail.

WHAT DID THOSE KITCHENS TEACH YOU?

Put your heart into every dish, whatever the restaurant or concept.

CAN YOU SPOT RESTAURANT BULLSHIT INSTANTLY?

Sometimes just from Instagram! But I judge whether it actually affects the food.

WHAT’S HARDER: MICHELIN PLATING OR PERFECT CHICKEN?

Both. Fifteen components are complicated, but unforgettable fried chicken isn’t easy either.

WHAT MAKES KOREAN FRIED CHICKEN AUTHENTIC?

Proper cutting, marinating, resting and cooking. Throwing Korean sauce on chicken isn’t enough.

FIRST-TIMER AT CHIX. WHAT’S THE ORDER?

Medium-spicy KFC gochujang, seasoned rice and kimchi or Korean pickles. Korea in one affordable set.

HOW DO NEW FLAVOURS MAKE THE MENU?

Endless tasting and testing until we’re completely confident.

    WHY RETURN TO GDAŃSK?

I had a story to tell. I wanted to bring my experience home and create something fresh.

    ONE DISH SURVIVES. WHICH?

The Korean chicken bowl. Seasoned rice, marinated cucumber and crispy chicken thighs glazed in rich sauce.

YOUR SECRET, SLIGHTLY CRAZY MENU IDEA?

Perfect fried chicken wings topped with caviar. Maybe too much for a food hall!

STRIP AWAY THE MICHELIN CV. WHAT DOES CHIX PROVE ABOUT OLAF?

That consistency matters. Deliver incredible flavour every time, pay attention to everything and build genuine relationships with guests.

For Olaf, CHIX isn’t about leaving fine dining behind. It’s about bringing everything he learned back home and making great food accessible to everyone. Same obsession, different plate. And knowing Olaf, those caviar-topped chicken wings might not be such a crazy idea after all.

  • CinnaRoll Tricity: Trading Corporate Life for Cinnamon Rolls

CinnaRoll Tricity: Trading Corporate Life for Cinnamon Rolls

Gariba swapped corporate security for cinnamon, chaos and a dream of her own. We talk failed batches, big risks and the obsession behind CinnaRoll.

    BEFORE CINNAROLL, WHO WAS GARIBA?

A corporate girl! Over ten years in localization and project management. Good career, stable salary, but I wanted something of my own.

    WHEN DID BAKING BECOME SERIOUS?

Gradually. I became obsessed with recipes, flavours and techniques. Eventually, I started imagining a business.

WHAT WAS HARDEST TO LEAVE BEHIND?

Security. Walking away from a predictable salary was terrifying, but incredibly rewarding.

    WHY CINNAMON ROLLS?

They’re comforting, nostalgic and endlessly versatile. I wanted one product people would instantly associate with us.

    HOW MANY FAILED BATCHES?

Plenty! Recipe development was a team effort. We tested, tasted and started again.

WHAT’S CHANGED SINCE YOUR FIRST ROLL?

The texture. Today’s rolls are softer, more balanced and refined.

    YOUR BIGGEST OBSESSION?

Dough softness. Getting it consistently right takes serious attention.

    WHICH ROLL DEFINES CINNAROLL?

The Classic with cream. There’s nowhere to hide when something’s that simple.

    ANY UNUSUAL EXPERIMENTS?

Carrot Cake! Our first attempt tasted like cinnamon roll with carrots. We eventually perfected it.

    WHAT FLAVOURS CAN WE EXPECT?

Pistachio, Kinder Bueno, Oreo and Lotus, plus seasonal creations like Pumpkin Spice and Apple Pie.

    WHAT HAPPENS BEFORE OPENING?

Coffee! Then dough, fillings, baking and that incredible cinnamon smell.

    WHAT WON’T YOU COMPROMISE ON?

Ingredients. Pistachio must taste like pistachio. Fruit flavours need real fruit.

    EVER THOUGHT ABOUT QUITTING?

Absolutely. But returning customers and my incredible team keep me going.

WHAT HAS FLOUR TAUGHT YOU ABOUT LIFE?

You can’t control everything. Sometimes you just have to adapt and trust the process.

Gariba has proved that a little cinnamon and a lot of determination can go a long way. And at CinnaRoll, the results speak for themselves. The only thing rising faster than her dough? Her ambitions.

  • Detroit Pizza Gdańsk: Inside the 3City Daily Story

Detroit Pizza Gdańsk: Inside the 3City Daily Story

Forget white tablecloths, fancy speeches and people telling you how pizza should be eaten. At Banda Pizza in Gdańsk, it’s all about good dough, big flavours and doing things their own way. We get behind the scenes to discover what makes this pizza-loving crew tick, why great pizza is never quite as simple as it looks and how a little attitude can make all the difference.

KAROL, WHY DETROIT PIZZA IN GDAŃSK?

We were bored of seeing Neapolitan pizza everywhere. Detroit-style looked completely different, and in 2025 there was only one place serving it in Poland. We wanted to bring something fresh.

SO WHAT DOES BANDA ACTUALLY MEAN?

A gang of friends. We’ve always had lots of people around us, so we wanted somewhere everyone could meet, eat and hang out.

KAROL, DID EMINEM REALLY SEND YOU TO DETROIT?

Pretty much! I’ve loved Detroit since I was a kid, probably because of Eminem. I travelled there to learn how the real pizza is made. I also visited Chicago, where Robert Maleski from Milly’s Pizza in the Pan taught me so much. I came home and changed almost everything about our recipes.

    WHY MOVE TO SZEROKA?

Our first place was tiny and takeaway- only. We needed a bigger kitchen and somewhere people could sit, grab a drink and enjoy the whole American atmosphere.

YOU’RE MARRIED AND RUN A PIZZERIA. RECIPE FOR ROMANCE OR MURDER?

Definitely murder! Anyone who says otherwise is lying. Ania has a full-time job, so I’m practically living at the pizzeria. But she’s always involved in ideas, events and planning.

WHAT SHOULD A DETROIT PIZZA VIRGIN ORDER?

Our classic Detroit. Pepperoni, a little spice and sweetness from hot honey. And those crispy, caramelised cheese edges! They’re the best part, especially with our homemade sauces.

HOW MUCH OF DETROIT IS ACTUALLY INSIDE BANDA?

A lot! Detroit loves cars, sport and music, and we’ve brought that atmosphere here. I still miss the city’s Art Deco architecture and the Riverwalk, where you can look across to Canada.

WHAT’S BEEN YOUR MOST SURREAL PIZZA MOMENT?

The President of Poland visiting us in August! That was crazy. We were honoured he chose to try our pizza.

DO YOU EVER STOP TALKING ABOUT PIZZA AT HOME?

We try! Sometimes we escape Gdańsk with the kids and make a rule not to check the restaurant. Luckily, we have a great team. Then we can talk about our next trip and, most importantly, our children.

FINAL QUESTION. WHAT DOES YOUR PARTNER DO THAT DRIVES YOU ABSOLUTELY CRAZY?

Karol: Ania makes plans for us without checking when I’m working. Then we have to cancel everything! Ania: He leaves the kitchen looking like a disaster. But his cooking is so delicious, I usually forgive him.

  • Piątek Café Gdańsk Oliwa: Two Sisters, One Café and Plenty of Arguments

Piątek Café Gdańsk Oliwa: Two Sisters, One Café and Plenty of Arguments

Some places serve coffee. Others make you forget what day it is — in the best possible way. Piątek Café in Gdańsk is all about good vibes, something delicious on the table and finding a little Friday feeling even when the weekend is nowhere in sight. We take a closer look at the people and personality behind a café that believes life’s too short for bad coffee and boring afternoons.

TWO SISTERS, ONE CAFÉ. WHOSE IDEA?

We’d always dreamed of it. Kasia finally convinced me the timing was right.

WHAT DID YOU DO BEFORE PIĄTEK?

Kasia explored pastry while raising a family. I travelled and worked in psychology.

    WHY OLIWA?

City energy meets nature. Piątek fits perfectly between the two.

    WHO’S THE PERFECTIONIST?

Ola: Me! Without Kasia, we’d still be preparing to open. We argue, then compromise!

    BIGGEST ARGUMENT?

The name. Much harder than you’d imagine!

    WHO WON?

Piątek! It’s our original surname and the best day of the week.

    WHY THE SHORT MENU?

Freshness. Seasonal dishes and a small but interesting wine selection.

    ONE MUST-ORDER DISH?

Kasia: The Reuben! Ola: Our omelette. But the Reuben is beautiful too.

    SURPRISE BESTSELLER?

Roasted cauliflower! Nobody saw that coming. Customers still ask for it.

    WHAT DOES SUCCESS MEAN?

Happy guests who feel comfortable here. That’s always been the goal.

    BIGGEST SURPRISE ?

Nobody warned us about success! (Laughs.)

    MORE PIĄTEKS COMING?

Big plans! And Kasia has ADHD, so use your imagination!

    HAS WORKING TOGETHER CHANGED YOU?

After years apart, we’re together every day again. Like being back in our childhood home.

WHAT SURPRISED YOU ABOUT EACH OTHER?

Ola: Kasia becoming head chef. And waking up so early! Kasia: How well we work together despite our differences.

PIĄTEK ISN’T JUST A CAFÉ. IT’S… A place between street chaos and the warmth of home. Just like Oliwa.

At Piątek Café, the name says it all. It’s not just about what goes into your cup, but how you feel while you’re there. A good coffee, a little conversation and permission to slow down can turn an ordinary afternoon into something worth remembering. Because Friday shouldn’t have to be a date on the calendar. Sometimes it’s simply a state of mind.

  • Chicken i Kimchi Gdańsk: Fifi’s Got Seoul, and She’s Not Holding Back

Chicken i Kimchi Gdańsk: Fifi’s Got Seoul, and She’s Not Holding Back

Meet Fifi, the woman bringing serious Korean flavour to the Tri-City food scene. Behind Chicken i Kimchi is a story of ambition, authenticity, hard work and a determination to do things properly. We sat down with Fifi to talk Korean food, importing the real ingredients, building a loyal following, the challenges of running a restaurant and why some flavours are simply too good to compromise.

    Why Korean food?

The bold flavours, fermentation and street-food energy fascinated me. Korean food has personality. I wanted to bring that to Poland.

Were you nervous opening your first restaurant?

Absolutely! Korean cuisine was unfamiliar to many customers. But once they tasted it, they understood.

Your business partner is also your life partner. How does that work?

I bring ideas and intuition; he brings engineering logic. He tests everything, including recipes. We balance each other.

    Who wins arguments?

Whoever makes the stronger argument! Being right matters less than making the right decision.

One dish that explains Korean food?

Bowl Deopbap Yangnyeum. Crispy chicken, sweet-spicy sauce, kimchi, pickles and rice. Everything in one bowl.

    Biggest misconception about Korean food?

That everything is ridiculously spicy! Korean cuisine offers sweetness, acidity, umami and comfort too.

    Why import ingredients from Korea?

Some flavours simply cannot be replaced. Authenticity means knowing what must stay original.

    Which Korean drink surprises customers?

Milkis! Sweet, slightly creamy and sparkling. Unexpected but delicious.

What would surprise customers about Fifi?

My years studying in Wrocław shaped me. Poland taught me independence and helped turn crazy ideas into reality.

Most underrated dish on your menu?

Bibimbap. Rice, vegetables, meat, egg and kimchi. Balanced, nourishing and seriously underrated.

One visit. What am I ordering?

Bowl Deopbap Yangnyeum, dumplings to share and a Milkis. And please, mix your bowl properly!

At Chicken i Kimchi, authenticity isn’t just a fashionable word thrown around on a menu. For Fifi, it means going the extra mile, sourcing ingredients from Korea and refusing to take shortcuts when it comes to flavour. Building a restaurant business takes guts, patience and more than a few sleepless nights, but she’s proving that staying true to your vision can pay off. The result? A little piece of Seoul in the Tri-City, served with plenty of personality. And if Fifi has her way, this Korean love affair is only getting started.

  • Pomelo Gdańsk: NO GUTS. NO POMELO.

Pomelo Gdańsk: NO GUTS. NO POMELO.

From washing dishes to running one of Gdańsk’s favourite neighbourhood restaurants, Krzysztof Szymański has taken the long road to success. Along the way came big ambitions, brutal challenges, a pandemic that nearly changed everything and a few lessons you won’t find in a hospitality textbook. We sat down with the man behind Pomelo to talk breakfast, Baltic flavours, family, heartbreak and why, despite everything, he’d do it all again.

Before Pomelo, who was Krzysztof Szymański?

Hospitality was always my dream. My father cooked aboard ships, and his travel photographs inspired me. I started washing dishes, eventually becoming deputy director of a four- star hotel.

What was your original vision for Pomelo?

Fine dining, exceptional service and sophisticated drinks. Our guests gradually transformed us into a welcoming neighbourhood restaurant serving comfort food.

What did Pomelo understand about breakfast before everyone else?

People wanted breakfast beyond 10 a.m.! We served it until 1 p.m. Word of mouth did the rest.

What’s the least glamorous part of running Pomelo?

Maintaining standards every single day. Food, service and atmosphere must work together. One weak link can lose customers.

You’ve been recognised internationally for welcoming pets. Was that intentional?

Absolutely. Animals were welcome from day one, even cats! We provide water, treats and photograph our furry visitors. Every one is special.

Why make your own bread, pickles and liqueurs?

Nothing matches homemade flavour. It’s about creativity, craftsmanship and bringing forgotten childhood tastes back to life.

    Three dishes that define Pomelo?

Baltic herring on Kashubian potato pancakes, Ogarna Street pork belly roulade and our chocolate-and-plum interpretation of Poor Knights.

You’ve reinvented your beloved herring. Better than before?

Previously, it was a creamy salad. Now cold herring meets a hot potato pancake. The contrast is fantastic!

Has Gdańsk’s restaurant boom made things harder?

Competition keeps us sharp. Guests explore new restaurants, but importantly, they return.

What would you tell yourself during those desperate pandemic mornings?

Keep fighting. Tomorrow brings another opportunity. Success isn’t just winning; it’s resilience and protecting what matters.

Has Pomelo given you your dream life, or swallowed it?

Both, perhaps. Pomelo became my home and family, especially after losing my parents around the time we opened. There have been sacrifices, certainly. But every smile, every review, every new dish reminds me why I started. Would I do it again? Without hesitation.

  • Magnolia Pottery: Paint Outside the Lines, Gdańsk!

Magnolia Pottery: Paint Outside the Lines, Gdańsk!

Who says getting your hands dirty is just for kids? At Magnolia Pottery in Gdańsk, Klaudia Gutowska is bringing back the joy of making something with your own two hands. We sat down with her to talk creative chaos, questionable artistic talent, switching off from screens and why grown-ups seriously need to play more often.

ALWAYS CREATIVE, OR A LATE DISCOVERY?

Always! Dancing, cooking, pottery. I just never thought I could make a career of it. Until now!

WHO THOUGHT YOU’D LOST YOUR MIND?

Me! Luckily, my friends didn’t ask why. They asked how we’d make it happen.

WHAT HAPPENS WHEN PHONES BECOME PAINTBRUSHES?

People slow down. Sometimes the studio falls completely silent. No screens, no pressure. Just creating.

    NO ARTISTIC TALENT. WHAT HAPPENS?

Choose a mug, bowl or plate. We’ll help you paint it, then glaze and fire it above 1,000°C. Your masterpiece is ready a few days later!

    STRANGEST THING SOMEONE’S PAINTED?

Baby footprints, pet paw prints and wonderfully weird creations that make everyone laugh.

HAVE ADULTS FORGOTTEN HOW TO PLAY?

Absolutely! Everyone apologises for having no talent. But creativity isn’t an exam. Not everything needs to be productive.

    WHAT DOES INSTAGRAM NEVER SHOW?

Cleaning brushes, glazing, firing and organising everyone’s pottery. Running a creative studio leaves little time to create!

YOUR LIFE ON A BLANK PLATE?

Dachshunds! My little sausage puppy takes up most of my life. The plate would be covered in them!

    BIGGEST DISASTER SINCE OPENING?

Discovering that following your dream doesn’t eliminate fear. Financial worries and uncertainty are real. Sometimes you just have to jump.

THREE WORDS YOUR FRIENDS WOULD USE — AND THREE THEY SHOULDN’T?

Creative, caring, determined. The forbidden three? Overthinking, stubborn, chaotic. My brain has twenty tabs open!

At Magnolia Pottery, nobody cares if your masterpiece looks like it belongs in a gallery or your five-year-old nephew could have done better. That’s precisely the point. Klaudia has created a place where you can switch off, pick up a brush and remember what it’s like to create something simply because it’s fun. And the best part? You leave with something you’ve made yourself — wonky lines, questionable colour choices and all. Because sometimes the best things in life aren’t perfect. They’re personal.

  • Zwidy Tattoo Gdansk. Get Inked.

    Zwidy Tattoo Gdansk. Get Inked.

In this 3City Daily feature, we meet the people behind Zwidy Tattoo in Tricity and hear their story in their own words.

KASIA, WHO ARE YOU WITHOUT TATTOOS?

Mother of three, psychologist, lecturer, wildflower lover and creativity trainer. I’m also learning Brazilian jiu-jitsu. I need chaos. Boredom kills me!

EVER WANTED TO STEAL YOUR OWN DESIGN?

Every single time! I finish a tattoo thinking I’d love it on myself. Then I create another and fall in love again.

    YOUR MOST UNFORGETTABLE TATTOO STORY?

A woman travelled from the Netherlands to celebrate walking across Norway. We tattooed plants from each region, spring flowers at her wrist, autumn leaves at her shoulder. Incredible project!

    WHAT DRIVES TATTOO ARTISTS CRAZY?

People arriving ridiculously early or rushing us. Tattoos last forever. Take your time! And please speak up if something bothers you.

ONE THING YOU’D BAN FROM TATTOOING?

Instagram algorithms. And their advertising monopoly.

    EVER REFUSED A TATTOO?

If the placement or size won’t age well, absolutely. But judging someone’s personal choices? Never.

    IF ZWIDY CLOSED TOMORROW?

We’d open an advice centre! We already discuss broken hearts, cooking beans and mysterious back pains. Talking is our second superpower.

WHAT DO GDAŃSK LOCALS LOVE GETTING INKED?

Dogs and cats! Everyone at Zwidy has tattooed someone’s pet. Apparently, Gdańsk really loves animals.

    WHAT MAKES ZWIDY DIFFERENT?

It’s a safe, welcoming space. Our crew brings passions beyond tattooing: ceramics, photography, jewellery, psychology, even bicycle polo. We inspire each other.

    WHO’S THE BIGGEST PARTY ANIMAL?

We’re actually nerds who go to bed early! Our humour gets dark, though. And The Cure always ends up on the playlist.

HOW DOES IT FEEL KNOWING YOUR ART LIVES ON PEOPLE?

Like meeting an old school friend. My tattoos have travelled through weddings, adventures and births. We’ve shared a little history.

IF YOUR ENTIRE LIFE BECAME ONE TATTOO?

A colourful, chaotic, abstract full- body piece!

At Zwidy, tattoos are only part of the story. Kasia Kot has created something far more interesting than your average ink shop — a welcoming little universe where creativity, strange ideas and wonderfully imperfect people belong. Psychologist, mother of three, wildflower obsessive and now Brazilian jiu-jitsu beginner, Kasia clearly isn’t interested in living inside one box. And neither is Zwidy. Come for the tattoo, stay for the personalities, and leave with something that means more than a pretty picture on your skin. Because perfection is overrated. Personality isn’t.
